Which Catalyst will replace the 3550 12G (core switch), so all the downlink switch will communicate via gigastack to the core switch? If not what is the alternative?

You should use the 3750 Siwtches.
You can put the 12 port fiber on top and the add different types of switches 24 or 48 poprt below them. You do not need the stacking GBIC.

The 3750 platform is indeed wonderful. The stack cables provide a 32 gigabit backplane between switches, and the IOS software allows you to manage the switches as one logical unit, similar to you how manage a chassis switch.
