I have two running 3750G's do I have to shut them down to add a 3rd? or can I add the link cables and turn it on?

You can add a 3rd switch into the stack without problems. No need to turn off the active switches.

You can add the switch on the run but you need to take care of some hardware/software compatibility mismatch modes.You also have to stack stack protocol version compatibility on the stack.
