How can a user with an IP address not part of the subnet for his default gateway (because a user is in a VLAN far away from others in his VLAN), be allowed or be able to work properly?

you will have to bridge that vlan to where this user is or put him in the different subnet that is there with the default gateway to allow him to work.

the local router has to build a tunnel to the natural default gateway so that the user can pretend to be still in its subnet
