Cisco 3750x and Avaya 9611g IP phone CoS question

Afternoon guys.

Somewhat at a loss here and with pressure mounting to find a resolution, I need to turn to the experts to resolve an issue that is becoming pretty political pretty quickly.

We have a stack of 4 3750x switches an into each are plugged, among other things, Avaya 9611g handsets.

I have the client desktops in VLAN8 and the handsets in VLAN10 which is set in the Voice VLAN.

We are having some major issues with quality on external calls with clipping etc and, more recently, the handsets locking up all together.

With a fairly limited exposure to Cisco iOS, I'm in dire need of some assistance, having had these switches effectively pushed on the department with little regard for said limited exposure.

My question is...How do I overcome the clipping and quality issues?  I believe I need to set some CoS/QoS on the switches but I'll be damned if I even know where to start looking!
