I am wanting to etherchannel from a 3750 stack to core Layer 3 switches (also 3750) with a cable going to each core switch, I have put both core switches and the stack under a 28bit subnet mask, but I dont seem to be load balancing across both links.
If the only issue is load balancing and your etherchannel is up/up - then the problem is the load-balancing hash used.
I believe the default load balancing method is based on the source mac address. If you are traversing a point to point L3 link, the source MAC will remain constant, resulting in the same hash every time - this means the traffic will always traverse the same link as opposed to a proper load balance.
You can verify the load-balance method with the command:
"show etherchannel load-balance"
You may want to set it for source or destination IP address.
I understand now! Interesting design.. can't say I have any experience with this type of implementation, however my interest is peaked. I know conventional wisdom says this is a bad idea when it comes to L2 port-channels, but L3, i'm not so sure. What you're describing is generally facilitated by a vPC or by using VSS on a 6500.
Does the access switch routing table point to both of the 3750 IP's? (Equal Cost Multipathing)

Don't believe what you have in mind is Kosher unless the core switches are running VSS.
This is actually a pretty cool feature, i didn't even know it existed until I was looking for a solution to advertise a subnet (prefix in BGP talk), only if a certain condition existed. This is exactly what conditional advertisements does
