Hi,
If you want to have some redundancy and link aggregation then yes, an etherchannel will be a good option for you.

Yes, but if you do, you might want to also check if the load balancing algorithm is optimal for your traffic (on both the 2960 and 3750).

Yes you can implement etherchannel on uplinks for the switch models you mentioned. To assist you with the configuration, here is a link to the official document: http://www.cisco.com/c/en/us/support/docs/lan-switching/etherchannel/12025-49.html#topicA
Take note of the "Suggested EtherChannel Modes Between Catalyst Switches" section for the mode to use on both switches while using PAgP.
In order for ether channel to be configured properly, both switches check among themselves to match their link speed, link duplex, STP interface settings, VLAN membership, Native VLAN, Allowed VLANs, and trunking encapsulation. In addition, switches check the settings on the neighboring switch. The neighbor must match on all parameters in the list except the STP settings.
