It is common to put a proxy in a DMZ. What do you mean use the LAN interface for VPN traffic.

would I only require 1 nic in the proxy in this case ? I have seen where some people have 2 network cards in the proxy, 1 goes to the lan, the other goes to the dmz, what is best practice, can anyone help ?

You would require just the one 1 nic, I have seen where people use to nic's to drop into different VLANs, but generally you would require only one nic, which would reside in a lan that hangs off a DMZ port on the firewall.
