Infact on any Cisco switch in my oraganisation, I am not able to see interface going down logs when enter show logging
I see below is configured on switch
no logging console
logging trap notifications
logging source-interface Loopback0
logging <IP address>
Any reason why I am not able to see logs when I enter show log on switch?

In some switches, like 4500 & 6500, this behaviour is normal. You'll need to add the command "logging event link-status " to each interface if you want to see the ports go down/up.

Or you could add "logging event link-status global" and then to exclude specific interfaces you can do a "no logging event link-status" on the interface.
"logging event trunk-status global" may be useful too.
