I have a 100 user network connecting to a 20Mbps private IP backbone. I need to select a router and a switch. For this conversation, lets focus on the switch.
Which Gigbit capable stackable switch would you recommend ?

The only stackable switch available is the Cat3750-E.
If you are looking for modular switches, then you have: Cat4500 and Cat6500
There is a big difference in price among the 3 models I mentioned, thus budget will dictate your choice.

Besides the 3750-E, there's also the original 3750 series. Both 3750 series can offer triple speed Ethernet interfaces. The -E series can provide more performance, for routine user hosts, you might not need the addtional performance.
BTW: Both 3750 series can also route. Depending on your needs with the 20 Mbps, you might not need a separate router.
