Varies depending on model. There are two references that are good for this:

Catalyst Switch Guide

http://www.cisco.com/en/US/prod/switches/ps5718/ps708/networking_solutions_products_genericcontent0900aecd805f0955.pdf

Cisco Product reference guide

http://www.cisco.com/en/US/prod/qrg/index.html

Typically, routers measure in pps and switches typically are rated on switching fabric capacity (Gigabits of bandwidth).

The Product reference guides did have the pps stats for the 2960 series.

WS-C2960-8TC-L - 2.7

WS-C2960-24TC-L - 6.6

WS-C2960-24TT-L - 6.6

WS-C2960-48TC-L - 10.1

WS-C2960G-48TC-L - 39.0

WS-C2960-24-S - 3.6

WS-C2960-24TC-S - 6.5

WS-C2960-48TC-S - 10.1

These numbers are in Millions of Packets per second (Mpps).
