It pocible route to multiple servers (www: 80, ftp:21, SMTP: 25) on the LAN from the Internet with just one public IP address with a 1800 series routers?

yes. You will use static PAT for it. ie point 100.123.56.1:25 to 192.168.5.1:25

pocible is set this way ?:
static PAT for it. ie point
Public ip / Internal ip
100.123.56.1:25 to 192.168.5.1:25
100.123.56.1:80 to 192.168.5.2:80
100.123.56.1:21 to 192.168.5.3:21

Yes
it will look something like this:
ip nat inside source static tcp 192.168.5.1 25 100.123.56.1 25 extendable
...etc...
ip nat inside source list Number (route-map Name) interface ID overload
