Well that's a rather broad request. For the router do you mean how routing actually functions ?. If so there are many books dedicated to that single topic. Perhaps if you were more specific ? At what level do you need to go to ?
For the L3 switch, again depends on the level. At a very high level it's fundamentally the same process as a router but where the process takes place, how it is done in terms of hardware, resources etc is very different. Again what exactly are you looking for ?

A router is usually a routing only dedicated device which performs no L2 switching... only routing between ports/interfaces and/or between configured sub-interfaces each of which are on their own separate subnet.
A L3 switch is basically a router with L2 switching capability built into it. Thus it can have it's ports configured as either L2 or L3 and either switching or routing can be performed between specified interfaces.
L2 switches act only at layer 2 and thus cannot perform routing between subnets. Routers and L3 switches can perform routing between subnets. But routers cannot perform switching as they only do routing between subnets!
