I'm looking for a switch with the following characteristics:
- 40+ copper gig ports
- 2+ X2 ports
- Dual power supplies
I've looked at the 2350, which has everything I need except the dual power supplies. I do not need layer 3.
Any suggestions?

Keller,
I would use 3560E or 3750E. They both will give you 48 ports of copper 10/100/1000 and 2 10Gig fiber for your uplinks. If you need to stack them, then 3750 is a good choice because 3560s do not stack.
Neither one has dual power supplies.

BTW, unsure about the "E" variants, but if they accept RPS power feeds, that might be acceptable to for a 2nd power supply.

Joseph,
The E variants do support RPS:
Redundant Power System
The Cisco Catalyst 3750-E Series Switches support the new generation of Redundant Power Supply (RPS) 2300. The RPS 2300 increases availability in a converged data, voice, and video network by providing transparent power backup to two of six attached Cisco Catalyst 3750-E Series Switches at the same time. The failed power supply can be swapped out while the switch is being powered up by the RPS 2300.

You can try the Catalyst 4948, Catalyst 3560-E or Catalyst 3750-E
