A 3620 will take 2 x NM-xx cards, a 3640 will take 4 x NM-xx cards and a 3660 will take 6 x NM-xx cards.
Both the 2509 and the 2511 models can often be found on the likes of Ebay and are probably the cheapest option. The NM-16A and NM-32A cards are usually quite expensive on Ebay, but depending on the size of you lab you might want to consider this option also.
Also both the 2509 and 2511 come with a Rj45 option. This means that instead of the 68pin interface for the octal cable(s), they have 8 & 16 Rj45 interfaces respectively. With these models, you use individual roolover cables between the ports on the access server and the console port on the equipment that will be accessed via the access server.
When my own home lab grew too big for a single 2511 I just bought a second rather then the expense of a NM-32A card. Also prefer to keep my 26xx and 36xx routers for my actual lab rather than using them as access servers.
