Using multiple ethernet ports to aggregate throughput on microsoft servers

We have not done this before. Should I just create a port channel for each of the servers NIC cards and assign the VLAN to the port channel?

At the switch side, you need to configure etherchanneling which is described on this link:

I recommend selecting the mode 'on' for the channel-group.

At the server side, I recommend reading the documentation on how to configure a channel for aggregate throughput.
