Can two different Cisco Works servers 'share' their information? Can I 'import' the data from a remote Cisco Works Server?

It depends on what verion you are running. It can be done starting with LMS 2.5

We are running the new 2.5 version, but the other instance of CW is running an older version.

Only thing you can do is export the RME inventory from the older version (RME -> Admin -> Inventory -> Export to File, select CSV version 2) and then import it into the new version.
