Does anyone have a tool\script or a way to automatically save a config on a switch\router\firewall\etc. on a daily basis and\or everytime a change is made?

You may be interested in an Open Source solution such as RANCID (http://www.shrubbery.net/rancid/), or fetchconfig (http://www.nongnu.org/fetchconfig/); or something like CiscoWorks LAN Management Solution (http://www.cisco.com/go/lms/ ).

This functionality is included in CiscoWorks LMS' Resource Manager Essentials (RME) tool.

It is also available via using free open source tools. RANCID is a very common one in use. See http://www.shrubbery.net/rancid/

Just to throw in my 0.02 worth, check out Solarwinds Network Configuration Manager. You can create a nightly job to save your configs, then download them (among other things). I'm pretty sure it can do it after a change as well.
