Does anyone know any good books or websites on how to use packet sniffers ?
Also, what would be some of the most important monitoring/management tools
that a network admin should have, apart from Ciscoworks, Openview or any big $$$ tool.

There are NO Books available to teach how to use the Packet Sniffers. Normally, it's an easy tool and you will get used to it once you start using it.
"Ethereal" is one of the good packet sniffers in the Market and easy to use.

Try this
With MS Windows AD, IAS, IIS, LINUX, UNIX, Perl Scripting, HTML/SHTML, NAGIOS, MRTG, CRICKET knowledge. You can setup a management/monitoring system without buying any expensive commercial software. Unless of course the project requires them and have $$$
