I had a recent experience with a 2801 IOS upgrade and CUE update. I knew little about CME/CUE or SRST but was familiar with CUCM and CUCX. I bought the book CCNA Voice Official Certification Guide (Idon't have a CCNA, but should) and read it. It is all aboiut basic voice configurations and goes in depth on the CCP which is actually a good learning tool if you are not a CLI kind of guy. CME or SRST is a lot different that CUCM as the software is all ready on the router and runs in the IOS. CUCM you create the server pubs and subs running on a remote site where thats all the software does. Alot of the configuration happens in 'telephony-service'. The router does all the work.
Try a search for- Site:cisco.com 2921 configuration examples. Setting up DHCP is like any other router or layer 3 switch, option 150 for cisco. Cisco Unified SCCP and SIP SRST System Administrator Guide has a lot of good info in it as well. The major difference is that the Router acts as the Call Manager Server as well as routing.
Don't know if you are confused as I was but by the time I got done, I was a CME subject matter expert.
