Maybe a strange question, but is there a way to have ANI carried through a Unity Call Handler, and instead of the VM port ID on a Blind transfer, having the calling part information displayed to the IP Phone instead?

Very common question actually. Unfortunately the answer is no.
The display on the IP phone is controlled by Call Manager. For an incoming call the IP phone should display the calling number. During a transfer the transferor originates the new call leg to the target phone. Hence the target phone will see the transferor's number as the calling number. The display should get updated once the transferor releases the call. At that time the target phone should see the transferee's number. Again this is all out of Unity's hands.
