yes, you can do this with BulkEdit - the option is actually on the profile tab - you may be looking on the conversation tab. The option is "Subscriber Conversation Style".
this option is visible only for Unity 4.0(3) and later, of course, since the conversation style is only selectable per user in that version. Prior to that it was a system wide registry key setting.
