The documentation that I have been reading does not show or state if I can have more than 1 person assigned to a phone extension and if the system can be configured for multiple people on the same extension with different mailboxes. So, I guess my question is can the CUE on the CME have 2 mailboxes assigned to the same extension? If so, How do I configure each seperate mailbox for each user?

There can be multiple users at each site/extension, but out of total users only the number of licensed users can check email concurrently. Remember each unity port registers to router as a virtual ip phone, so the router thinks it as one line.
