What would be involved in changing the AD Forest name and the OU used for Unity? Is this even possible?
Or how about moving a unity server that is in a one Forest to another forest?

You can't just move a Unity server from one forest to another I'm afraid... presumably this is a voice mail only installation and you want to move all the users (and their home Exchange stores) into the new forest as well, correct? If that's the case you'll probably want to do a DiRT backup, include messages and do a new restore into the new forrect after you've installed Exchange/Unity cleanly - it'll save all your subscriber info and messages - the help file for DiRT does lay out a few items that are not preserved in this process - you can snag the latest version of the utilities (and check out the training videos if you want) on AnswerMonkey.net here:

AD forests don't have names. Domains within the forest do but AD doesn't allow you to change their names. You can't change the machine name of a domain controller either. AD **does** allow you to rename OU's.
