Check out chapter 10 of the System Administration Guide... it coveres call management features of Unity which includes how to configure/modify call handlers (i.e. the opening greeting) and the like.
You'll find the admin guide under the \Documentation directory on CD #1 of your Unity CD set. There's also an Adobe Acrobat setup under there if you need it to view the PDF files.
