You mean you want to change the server name of the box Unity is installed on? Well... Exchange doesn't let you just change it... it gets real unhappy if you do that. You need to install it as a new system in the site, which means reinstalling Unity. Ouch. Kind of expensive. If you have a real need to do this you can explore the import/export tools on my web page to help save your Unity configuration in this process but unless you absoltuely have to, I'd try to avoid this.
