No, both Exchange and Unity are going to get pretty unhappy if you try to change the domain name which, if you're also a DC/GC (and I assume you are) is tougher than it sounds in the first place.
If you really need to get that box into a different domain the only real option you have is using DiRT to back up the Unity data (and optionally messages), wipe the system clean, install it as a DC in with the new domain name, install Unity again and DiRT restore it - kind of a lot of work but it'll preserve all your data for you that way...
