which utility or tool can I check the T1 trunk utilization, from GW or CCM?

From CallManager, you can turn on your call detail records (CDR) and run reports on how busy it stays. Your telco can run reports as well. Probably the most accurate would be to setup some sort of management software (MRTG is free) and do SNMP queries over to the gateway.

From CM you can select Control Panel, Admin Tools, Permormance. Then use the (+) to set the Performance Object to Call Manager then add PRI Channels Active.
