Could anyone tell me whether the voice compression (if G.729 codec is used), is done on the Cisco IP Phone or on the gateway?
If the phone does the conversion, than does it support cRTP as well?!

The phone compresses the voice. If cRTP is required (for calls going across a WAN, for example) then the RTP header-compression is performed on the 2 routers directly connected to that slower interface.
