You can always do this via Outlook, of course, but theres no built in Unity tools or AnswerMonkey tools to automatically delete mailbox contents for multiple users in bulk Ive been loath to explore such a tool since the potential for a messy accident is a bit too high. Me and the Customer Applications team are kicking around a voice mailbox manager type application to kick out usage trend info, per user inbox characterization (down to the message type, age etc ) and providing an automatic delete-based-on-these-rules type functionality but its still on the drawing board.
Microsoft provides a Mailbox Manager tool for both Ex55 (SP3 and later) and Exchange 2000 (SP1 and later). This guy can do what you need I think. Heres a link to info on the Ex2K version on MSDN:
