Detecting traffic from network-based video cameras

I am trying to find the best way to detect streaming video over our company network (large!). This is mostly security camera traffic that we need, but I would like to enforce the resolution (and resulting bandwidth). Is this something I may be able to acheive from NBAR? This has to be within the confines of what the individual switches and routers can do.

A regular campus network, gigabit based, will have no problem in handling no matter how many cameras.

You do not need to worry about NBAR, confinement, or anything else.
