I want to setup Unity such that when a subscriber logs into his mailbox via TUI, he is not given the priviledge to change his "Greeting". Is there a way to accomplish this?

There's no way to turn off greetings in the subscriber setup conversation - you can restrict access to directory listing status, call screening options, voice name, phone password a few other items but getting at your greetings is always available to users once they sign in.

No, there is no way to accomplish this in the TUI. You might consider editing the wave files that play the menu to remove references to the Greetings.
Problems with that are -
1) Cisco TAC does not support changes made to system prompts.
2) An upgrade will wipe out your changes and you will need to make them again.
3) If the subscriber does hit the key for greetings during the menu, they will still get to the greeting.
