I was wondering if any/what kind of codecs are used connecting to the PSTN using a T1 MFT interface from a IP phone. I want to use an AIM-VOICE-30 with a 2600 router and I want to make sure I will have enough DSPs. The phones are all using G.711 compression.

DSPs are still used.
Yes, echo cancellation will still happen on the DSPs as well as any transcoding beween ulaw and alaw(if needed)

So then there are no DSPs used? How about for echo cancelation?
