Hi,
what do I have to know from my teleco company about E1 line that they provide to configure it on VWIC2-1MFT-T1/E1.
20 channels will be used.

You'll need to know which channels they're using and only enable those on your gateway.
(NB: channel 16 is the control channel)
You will also need to know the framing type (CRC4 or NO-CRC4)
Here's all I had to do to set it up recently, which I split into 2 groups to match the PBX's, although you don't have to.
card type e1 0 0
controller E1 0/0/0
framing NO-CRC4
ds0-group 0 timeslots 1-15 type e&m-immediate-start
ds0-group 1 timeslots 17-30 type e&m-immediate-start

is there a rule to always use the lowest 'timeslots'? I mean, if we need 20 channels we will use 1-15, then 17-21 ?
I thought E1 supports 31 channels + 1 control channel, wich gives 30 useable timeslots, how is it?

I don't believe that there's any rule, purely depends on how they configure their end but it would be logical to implement it as you suggested.
Correct - 30 data channels (1-15 & 17-31).
If you don't enable the same timeslots as the provider then the caller will intermittently get silence if they get connected on a mis-matched channel
