Extension mobility between different IP phone models

If I am using a 7941 phone can I login to a 7961 phone with my 7941's profile and vice versa.

Yes you can. CCM 4.0 and later has the concept of Device Profile Default which allows users to login to phone models for which they do not have a configured device profile. Take a look at the following link.
