as of 12.2.(15)T and above it is possible to route Data-calls over (clear-channel) Voip-legs.

But, for specific reasons:

How can I deny to route Data-calls and only permit

Voice calls in my Dial-peers ?

You can mark the voice packets as hight priority and can apply some Qos Policy on the same.
