I'm not quite sure where you should start but the following sites helped me. I was pretty green to VoIP network planning & configuration until about 2 months ago. The following pages should help get you up and running your own straight forward VoIP network. Good luck:

Start up donfiguration

Vo-IP Configuration

Re: Info on how to build a basic Ip Telephony System

Dear Mr. KEVIN WHITE

SR SUPPORT ENGINEER, PEREGRINE SYSTEMS

In order to planning an IP Telephony Network You can follow this link.

http://www.cisco.com/univercd/cc/td/doc/product/voice/ip_tele/solution/3_planni.pdf

ANd another for to get informationa related to Voice Over IP directly on the Cisco Main Page search window.

Another one if You are using a Frame Relay link You can employ Voice over Frame Relay wich has a very good behavior, mainly because you can select different MTU for the voice paket and for the data packets.

If you are a Cisco Partner and have access to the PEC you can access some VOD sessions on basic VOIP deployments/design. I also took a KnowledgeNet online lab that allowed me to configure and play with a complete Cisco VOIP environment, pretty cool stuff.
