You can by a spare for backup purposes but I don't think it would be supported to do raid 5 on the callmanager servers at this time. The install cds will configure it as raid 1 with the 1st 2 disks in the system.
Mirroring (RAID 1) is the best option here. The reason you want to leave it that way is when you do an upgrade. You should follow Cisco's guidelines and remove one drive before performing an upgrade. If the upgrade does not go well, you can always revert back easily with the other hard drive. I usually wait one week without problems before putting the second drive back in.
