I think the easiest way to do that would be to activate their Alternate greeting rule (which will over ride all other greeting rules), record a greeting indicating theyre out of the office and not taking messages, then set the After greeting action to send the caller back to the opening greeting (or to say goodbye or whatever) instead of taking a message.
If you wanted to go for style points, you could also disable transfers to their extension so people dont waste time ringing the persons phone via auto attendant transfers while theyre out.
