If more than one domain controller in a Unity system. Do I need to extend the schema on all DC/GCs (one domain only) before installation of Unity. Once the first DC is down, will the Unity work fine with additional DC (can retrieve, leave and delete the voice message and change settings thru' the admin page)?
With AD the schema is consistent across the entire forest. This means that changes are made to one DC only (the schema master) and they replicated to all other DCs.
Unity will only work with a single DC/GC. To find the best possible Unity makes a query to the RootDSE during Configuration Setup. (That's the part were you hook it up to the mail server.) The values returned are written to the registry and don't change without manual intervention. So adding a second DC/GC doesnt do much to help Unity today.
