Is it possible to route a call based on the calling parity number in the IOS?

No, call routing in IOS gateways is done using called party number only.
You do have options to restrict calls based on Calling party number using Class of Restriction, COR. Using this, you can setup so that only certain calling numbers can place calls or can use certain trunks etc. If your requirement is not too much, then you might be able to achieve it using Class of Restrictions.

The scenario that I am trying to work out is on one analog line to be able to receive voice calls and FAX, and was wonderring is it possible the router to distinguish between voice and FAX and based on that to send the call to different extensions?
