You can't undelete them over the phone (i.e. pull a voice mail message out of the deleted items folder and into the inbox folder from the telephone).
However if you have your COS configured to copy deleted voice mail messages to the users' deleted items folder, you can get in ther in Outlook and drag it back. By default, however, items deleted over the phone are removed forever so as not to fill up the users' mailboxes (particularly in a POV setting where folks aren't using Outlook). You have to configure the COS for this.
You can empty the deleted items folder from the phone, but you can't walk into it and fish around for messages at this point.
