Shouldn't have to do anything - Unity will pick up the new mailstore(s) on that server on the fly. If you use mailboxes over to that new server there may be a brief delay the first time those users log in to check mail over the phone since we'll attempt to log into their old mailbox location which will have moved and we'll have to query AD to find the new mailbox location - it's a small delay and will only happen the first time the log in.
Other than that, there's nothing you need to do on our side of the fence if all your doing is adding a new Exchange server to an established network.
