First, Unity doesn't HAVE to be a member server... technically it can be a DC but we strongly reccomend installing as a member server since a DC entails some overhead you'd rather not the voice mail server if you can avoid it.
Second, yes you can be in different domains but obviously the account you install with and assign to the "message facing" services needs appropriate rights on that server in that domain. For the "companion server" you hook Unity up to directly it's a good idea to have them in the same domain. You can have subscribers on that Unity server homed on other EXchange servers in other domains in the forrest so long as rights/permissions are setup correctly no problem. The companion Exchange server you select during configuration setup really should be in the same domain. You're asking for trouble otherwise...
