Unity 3.0 does not support clustering. Clustering is coming but is not available today. One CallManager cluster can support three separate Unity servers however. They can then be networked together with digital networking.

Where can I find some documentation or information about running three seperate servers with digital networking. What level of redundency does this provide? What is involved with this setup?

Well networking is not designed to provide redundancy. Networking is not clustering either. I think the only thing that would be redundant because of digital networking would be the auto attendant in that you could call any Unity and be able to release to switch transfer to any user.
