What is the easiest way to tell what codec (G.711 or G.729) my version of Unity is running? We are running Unity version 3.1 (6).

You mean what codec Unity is using to record messages? You can use the SetRecordFormat tool which is found in the tools depot under the audio management tools section - it'll show you the currently selected codec for new recordings.

I was actually hoping to try and see the codec used between the Call Manager and Unity.

The codec used between Unity other endpoints is determined by the Region configuration on CCM. Unity can use g.711 or g.729. For more details, look in the CCM Admin Guides.
