Are there recommendations for setting limits on mailbox stores in Unity??

We don't have recommendations. It depends on the codec you are using, the number of subscribers you have, the type of subscribers you have and the amount of disk space available to you, etc.
Our HCL gives you an idea of how much storage you get on our supported platforms:

On a side note the Customer Applications Team is working on a new tool called "Message Store Manager". The MSM, among other things, will include very detailed reporting on individual mailbox size/usage broken down by message types, read/unread status, age etc... to help you more accurately characterize the storage needs of a customer's site... not just for voice mail but for all message types. This will help folks get a handle on what types of limits they can/should be setting. The tool will also allow them to set those limits without having to go through Exchange to do it and will also allow you to easily setup auto-delete/cleanup rules for groups of inboxes.
I'll post out here when the tool is ready for EFT so folks can take a look at it and provide feedback.
