Can you have 2 unity servers, one running 4.0.3 and the other 4.1.1, using the same exchange server?

I dont see a problem with that as long as you maintain enough HDD space for the mailboxes on the server and also depending up on the Exchange version, you may need some service packs installed on Unity and Exchange server. When you install Unity, you specify a partner Exch. server. You may have more than one Exch server in the AD but you integrate Unity only to the partner Exch server. Mailboxes may exist in other Exch servers. Unity talks to the approp. Exch servers where the mailboxes are, through the partner Exch. servers.

Just make sure the on unity servers, you are running same version Exchange Admin on them as the Exchange server you are connecting. (and service packs for Exchange.)
If you want to get fancy, you can use Dialing Domains and connect the Unity servers together.
