Unity Upgrade from 3.1.5 to 4.0.3

We are wanting to upgrade from 3.1.5 to 4.0.3 w/ little downtime. We have 2 mcs7835's with the same specs on both servers. We planned on removing one of our mirrored hard drives on our production Unity 3.1.5 and put it in the other server and upgrade it to 4.0.3 and make it our new 4.0.3 server and remove our 3.1.5 server from the network. We are not running unified messaging and exchange is on the unity server in Voice Mail mode only. One thing that concerns me is the DONGLE. Do we have to have the DONGLE attached to the new server to do the upgrade? Which in reading the documentation to the upgrade prcedure it look like we do. How long will our Unity 3.1.5 stay up with out the dongle attached? Basically how long do we have to do the upgrade?

What time frame? If the upgrade fails can we just put the DONGLE back on the 3.1.5 production server and it work properly?

Unity checks the dongle every 24 hours, and I beleive it is done at midnight.
