The tricky bit for going from VM only to a UM deployment is dealing with the account mappings in the new directory you'll be installing into. The easiest way to approach this is to use DiRT to backup your current VM system, install a fresh UM system into the directory/mailstore you want and then do a DiRT restore. If the aliases of the folks you had on your VM system match those users on the UM system, you're home free. If not, things get a little messier.
