Question is if I upgrade the Publisher is it possible to upgrade the Subscribers later (As in a week or so) or do I need to upgrade them immediately?

Right away! The database is changed from SQL 7.0 to SQL 2000 so the Subscribers will not work with a 3.3 Publisher.
